2 Glasses of Flour, 1 Tea Glass of Water, 1 Egg, 1 Teaspoon of Salt, 1 Bowl of Yogurt, 2 Cloves of Garlic, 1 Tablespoon of Tomato Paste, 1 Tablespoon of Butter
Ingredient:
200 gr. Minced Meat, 1 Onion, 1 Teaspoon of Black Pepper, 1 Teaspoon of Red Pepper, 1 Teaspoon of Salt
The difference of Kayseri manti from other meat manti is its twist shape and small size. Kayseri manti is shaped like a bundle. For this reason, the dough is cut into a perfect square and after filling, the corners of the square are glued on top of each other. Then, the adhering corners are compressed in the middle and combined. After Kayseri manti is prepared, it can be cooked in two ways. One is as in my recipe, the second is; Saute the tomato paste in oil and add the manti on top. Then, salt is added along with enough boiled water to cover the manti. After the pot starts to boil, stir once and close the lid. Then "the freshness of the ravioli is according to your desire". Cook for 12 to 15 minutes. Garlic yoghurt or sumac is drizzled on top. Kayseri manti cooked with the second method will be juicy. The onion will be peeled and grated. Garlic yoghurt will be prepared. Tomato sauce will be prepared by roasting the tomato paste in butter.
Ravioli Dough:
Flour will be placed in the kneading bowl and a pool will be made in the middle. Eggs, water, salt will be added and mixed. Then, with the addition of flour, the dough will be kneaded to make it hard and smooth. The dough will be divided into 3 parts and made into meringue. The meringues will be covered with a cloth and left to rest for 15 minutes. Ravioli Filling: Minced meat, onion, black pepper, chili pepper, salt will be added into the kneading bowl and kneaded.
The glands are 1.0 or 1.5 mm. thick dough will be rolled out. The dough is 1.5 or 2.0 cm. It will be cut into square size. A sufficient amount of stuffing will be placed in each square, closed from opposite corners and joined in the middle. The closed manti will be placed in a flour-spread bowl. Then, it will be placed in boiling salted water and boiled for 15 minutes with the pot open at normal heat setting. At the end of the time, it will be transferred to serving plates with a colander. Garlic yoghurt and tomato paste sauce will be added on top.
